Yum! So gooey good and chock full of vitamin A. You'll just love these. Autumn pleasures.
Ingredients:
1 2/3 cups flour 1 cup sugar
1 Tbsp of pumpkin pie spice
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 1/4 cups chocolate chips
2 large eggs
1 cup solid pack pumpkin (not pumpkin pie filling)
1/2 cup (1 stick) butter
Directions:
1) Preheat oven to 350 F. Line a 12 cup muffin pan with paper muffin cups and spray lightly with nonstick cooking spray.
2) In large bowl, mix first six ingredients; add chocolate chips, tossing to coat.
3) In another small bowl, whisk together remaining ingredients; add to flour mixture and stir just until combined (do not overmix). Fill each muffin cup about two-thirds full.
4) Bake for 20 to 25 minutes, until muffins spring back when lightly touched. Cool muffins on rack.
